Turning Dinner into Lunch.

3 Nov

Once a week my Hubby goes to play poker with his mates, and we will usually have a simple dinner so I can have the kids in bed quick…and I nestle down and catch up on my trashy tv, and latest project.

Tonight we had pasta and it was soooo easy to transport into Miss 5’s lunch for tomorrow.   Here’s how I made and easy dinner and lunch in one.

You will need…
Pasta…a child friendly shape such as Animals, small shell, pinwheel etc.
A can of Tomatoes…which ever you like, savoury are good if you want to make it super easy.
Herbs…if you are not using Savoury Tomatoes
A can of Tuna
Grated Cheese and Chopped Parsely (for topping)

Put your water on to boil for you pasta.  At the same time, in another pot, put in your tomatoes and any herbs. I like to add Oregano from my garden pot.

Bring both pots to the boil.  Cook pasta as per the packet…and when the tomatoes start to boil turn down to a simmer and reduce.  If you have whole tomatoes mash them up gently with your potatoe masher.

When the pasta is cook dish out onto dinner plates and a container  suitable for the lunchbox.  I use my small Easyo ones.

Then add at layer of your tomatoe sauce, a helping of Tuna and garnish with Cheese and Parsely.

Done.  Be sure to put the Pasta for Lunch in the fridge.Lunchbox pasta with canned tuna

Firstly, I have to say this place has the best steak!  Hubby said it last time, so this time I tried one too.  It was perfectly cooked and I recommend it.  There is also a play area for the kids, but be warned, it is full of lolly machines.

The kids menu was pretty good for a pub meal, we did have the option of Roast and Veggies.  Perfect.  We ordered this for our daughter (the other child stayed at home with her Nan).  We had a great laugh though when the meal came out with a single serve of tomatoe sauce…it was like they just couldn’t help but add a bit of junk to an otherwise healthy meal.  Vegetables and Salads are available as an alternative with the kid’s meal.  I just notices on a photo I took of the menu, that a soft drink is comes with the meal (we did not receive ours) It would be interesting to see if juice would be an option.  There is free water available at the bar.

For desert there was no Fruit Salad as an option, and when I asked if they could do one the answer was no.  I didn’t push it, as I said earlier, our sick child stayed home and there was birthday cake to be had.  Their deserts were pre-made in a fridge, you had a choice of Cake, Jelly and some cream like dish.  There is also a Ice-Cream freeze with IcyPoles etc.

Name and Shame…or Praise

Tonight is a family birthday dinner.  This means a bunch of us all meet up at a local venue for dinner, more often than not they are ‘child’ friendly places.

My eldest is struggling with her lungs again, we have been lucky enough to avoid asthma, but she has a virus.  I try to avoid diary with her as it creates mucus and I ban it all together when she is coughing and not breathing well.  So…I tell her this morning that she will not be able to have Ice-Cream with her dinner, she was a little bit upset by this as we don’t usually have Ice-Cream in the house and it’s a nice treat when we are out.  In short her younger sister and I said we would support her by not having Ice-Cream either.  (And they know how much their mother adores Ice-Cream!)  Together we came up with a plan…Mummy will ask if we can have fruit salad with some chocolate sauce on top.  I know that the sauce is likely to come straight from a bottle, but I was on a good run and weighed up that tonight it’s better than Ice-Cream.

Now I’m a little stressed that we may not be able to get a healthy alternative as a treat, what if the Chef says no? I don’t remember it being on the menu last time we went.  With that in mind I have decided that I will start-up a ‘Name and Shame’ category.  We eat out on average once a week and so I can hopefully get a few places around the Peninsula and Melbourne that look after our kids.  We have been to places before where we have had to order an adults meal for the kids, just so they weren’t eating deep fried frozen foods.

I will let you know tomorrow how we go.
